How to Grow a Vegetable Garden | Growing, Eating your Greens

Many people seem to know that they need to eat their greens to remain healthy and resist disease. But relatively few people seem to be able to maximise the food value in the green vegetables they consume.

Aucklanders Michele La Chante and Ross Sims will share some tips on growing nutritious green vegetables at a one-day continuing education course at Otumoetai College, on June 1.

The couple will outline how to grow microgreens, what soils to use, when to harvest them and suggest methods of preparing them to eat. They will show how to prepare nutrient rich “green smoothies”, explaining which fruit and greens to use; how to store them and the best equipment to use to make them.

Other topics of interest will include how to prepare nut milks and what sea vegetables can be used to improve the nutrition.

The day designed to:

  • Provide a complete understanding of nutrient value of microgreens
  • Show how to prepare, plant and harvest your own microgreens
  • Give a through understanding of the value of ‘no dig’ gardening and the potential to create your own ‘no dig’ in the student’s backyard.
  • Explain how superfoods work and where students can include them in their own diets.

Each student will take away comprehensive notes and recipes on all subjects covered.
